I'm not sure how many times it was explained, but
many of the instrument scenes were not completely rotoscoped, and some of them are total animation.

It was mainly a mix of both animation and rotoscope and sometimes (depends on the skills of the animator) they just used the live-action footage only as reference.

Nobutaka Ito's animation in episode 7 as example was animated.
(the footage was probably used as reference)
