The Aztecs, Mayans and Incas had no problem adapting their own crops and domesticated animals from native flora and fauna
So Africa had the exact same flora and fauna America did?
Simply put; the foodstuffs that we now eat, mostly came from Eurasia, the rest from America. Not Africa.
As for why so much stuff (food&tech) came from Eurasia, it's a fkin
huge place, basically going east-west. In practical terms, this means that
all of it has the same basic climate; the same seasons, the same basic weather patterns, etc.(*) A plant that grows well in China, grows well in France. And a fuckton of places in-between. Similar with animals and tech.
(* There are anomalies (Taklamakan, Himalaya, Tundra etc), but those are, relatively speaking, too small to have any impact on this particular mechanism; the remainder is still fkin huge.)
America and Africa both go north-south; not only are there more climate types going on (esp with America), each climate zone has less space to itself. Try getting two crops a year in Alaska. Try growing
anything in Death Valley.
And once European colonists arrived in America, the climate there is more European-friendly than Africa. This, and the free-for-all land-grab that was the conquest of the West, attracted people that were used to thinking in terms of empires, and now had the opportunity to build one.
By the time America was exposed to the tech that we now take for granted, the important bits of it were in the hands of European conquerors and colonists. Even more so with Africa.
Not to mention how Africa's societal power structures beyond villages and tribes, were fubar'd by the colonial masters, who didn't bother putting anything worthwhile in their place. Also, it was the locals that threw the colonials out. Just about all of them too, since few Europeans bothered to settle there (except for the southern parts, with its somewhat more European-friendly climate).
In America the colonists not only outnumbered the locals, they had settled there to stay, to the point where most were even born there. Also, enough of them had the experience and mindset to build and maintain a nation that could grow into an empire.
In Africa, the general population was kept grossly under-educated. The educated elite was small, inexperienced and jammed between two cultures (trying to be European and largely forgetting to be Africans with their knowledge). This small number and inexperience, coupled with how many of these states were outright sabotaged by their former masters, made them vulnerable to the proxy war part of the Cold War, not to mention the local useful idiots that had no further ambitions than to carve out a small empire(tte) for themselves, with whatever oh-so-not-colonial help from abroad that they would need to get that.

tl;dr: Africans have had the deck stacked against them, to the point of deliberately cheating. And they have idiots, psychos and assholes like the rest of us, which isn't exactly helping.
