Soggy Broccoli and Cheese

    How do i make broccoli with melted cheese that isn't moist when it's done cooking, thus making the cheese all soggy and gross if it's left to sit out for a little while?
    The thing is, even if i bake it or boil it, it needs water to transfer temperature, and that meany when i add the cheese on to melt it is still fairly wet. even blotting it doesn't help that much, because the broccoli is like a sponge.

    deep frying is out of the question, and i would prefer not to fry it.

steaming would be optimal, uses the least amount of water to cook it.  but there's not really any way around the moisture unless you go with grilling or dehydrating, which doesn't really result in a very good broccoli.

who the fuck melts cheese on broccoli anyway?  make a real cheese sauce, then there's no 'soggy and gross' to deal with.  it really ain't that hard.

broccoli gets soggy really fast when being cooked. don't cook it for too long!
