Just make a normal waffle/crepe/pancake recipe, except don't put eggs in. The egg whites provide structure and help make it crisp up nice, and the yolks are essentially just fat. Neither are absolutely critical for the end product.
Add some butter or oil to replace the egg yolk if you want the richness. Try some mashed/pureed fruit or rolled oats as alternatives to the egg white to provide extra structure.
You may need to add some extra water to keep the batter at an appropriate consistency.
There's this brand called "Vans". I know they make frozen waffles that are gluten-free egg-free etc. I'd have them before, they aren't bad.

don't they sell an egg substitute in those little bottles?
check if that shit is hypoallergenic.
even so, you probably also want to ask her doctor, you don't know what specifically in the egg causes the allergic reaction and if the substitute has any of that in it.
you need the eggs to give lift and bind everything together

If the child isn't allergic to milk you can milk it up plus add some raw unflavored gelatin to the mix to give it the consistency you want. American pancakes can be made relatively easily with no eggs -- just add a little bit of fat, baking powder, and maybe something with pectin-- powdered pectin can give it a good consistency. Fruit pastes are good for this, too, and they give a nice flavor.

I've been a vegan for years, I just make my pancakes by mixing a cup of flour, a teaspoon of baking powder, a half teaspoon salt, a tablespoon sugar, a tablespoon oil and a cup and a half of some kind of non-dairy milk (but you could go ahead and just use dairy milk).
