Spring Roll recipes

There are tons of recipes for spring rolls out there.  I need one that's basic and tasty as I'm going to make this for a party where people aren't too adventurous.  I'm planning on the basics: celery, carrots, Napa cabbage, but I'd love to put in dried baby shrimp as well.

Thoughts, recipes, and suggestions are most welcome.  It's for Sunday night, for my girlfriend's birthday with her family.

Celery, carrots, CABBAGE!!!  That's not spring rolls.  That's a monstrosity.

You need proper spices, too.  Garlic and ginger are the universal spices for Chinese cuisine.  You don't have to use a lot, especially if you don't think the guests will like it; I am assuming that "not adventurous" in this context means "they don't like spicy food."

Spicy is out of the question, yeah.  Uber-exotic stuff like some Thai recipes I found are out of the question, too.  I'm looking for something basic and tasty like Filipino lumpia.

Don't forget the bean sprouts!  Good spring roll filling should have some bean sprouts in it.  Fresh are better than canned.

Fresh bean sprouts have a lovely slightly sweet flavor and crisp texture.  They're also just a little exotic to most USAians, but they don't have any kind of strong or overpowering flavor that would keep people who are "not adventurous" from enjoying them.

Oh, and they have vitamins.  ^_^

Pft. Shred cabbage, and and thin cut onions and carrot(these are most basic ingredients), and if you want chicken just geyt regular chicken breasts and slice very thin while still mostly frozen or you can use ground pork if you can find it. You can also put in water chestnuts, juliened snowpeas, bean sprouts etc if you want more veggies.

Start the meat in the wok/pan first, then add carrots, onion, water chestnuts. (firmer vegies) After a few minutes add the cabbage and other lighter veggies,  remember to stir it really well the whole time. Add soy sauce, ginger, and garlic, and a tiny bit of curry to taste. don't let the cabbage and other vegies you put in last get too cooked they should stay mostly crisp.
For a dish like this,(stir frys, salads, etc) I never use recipes, so this is the best I can do, but I can give you an actual recipe for the wrapers if you like?
