Spring Roll recipes

There are tons of recipes for spring rolls out there.  I need one that's basic and tasty as I'm going to make this for a party where people aren't too adventurous.  I'm planning on the basics: celery, carrots, Napa cabbage, but I'd love to put in dried baby shrimp as well.

Thoughts, recipes, and suggestions are most welcome.  It's for Sunday night, for my girlfriend's birthday with her family.

Needs more onion.  You can also add a small amount of minced chicken or ground beef to the filling.  I've even had spring rolls with minced potato added to the filling.

You need proper spices, too.  Garlic and ginger are the universal spices for Chinese cuisine.  You don't have to use a lot, especially if you don't think the guests will like it; I am assuming that "not adventurous" in this context means "they don't like spicy food."
