Good tofu recipes?

I've heard people sing the praises of this wonderful wobbly stuff.  What are some good ways to cook it?

Don't.  Put it on a small dish, garnish with chives, and pour a little soy sauce on top.

Get the hard dried stuff that you have to soak in water for hours before you use it. Then cut it up and stir fry it.

Soft tofu is fucking junk.

it tastes best when you boil it with miso soup. cut the tofu in larger chunks so you can eat more of it.

1) Purchase tofu as firm as you can get it.  >>3 makes a good point, but I haven't tried this recipe with rehydrated dried tofu yet.  Drain tofu as necessary.

2) Stir-fry with soy sauce, a bit of sesame oil, and some hoisin sauce.  After the tofu is somewhat cooked, toss in some dried shrimp and stir-fry for a couple more minutes.

3) Serve hot. 

My mom has an awesome recipe for mabo tofu, which if you cook it in large enough quantities, can feed you for a week on the cheap.

Dont let anyone fool you. Tofu is no replacement for meat. The experiances are totaly different. And for most who have never had tofu, it will come off as a foriegn experiance that you may or may not like at first (or ever).

A tip for preparing firm tofu. Take it out of the package and set it on a cutting board. Put something under one side of the cutting board to keep it at an angle. Put a somewhat heavy plate on top of the tofu. This will help to drain all the excess watter and make it mich more conductive to pan frying.

You need to drain it for ~ 1 hour for it to be nice.  Also, forty minutes in, take it out, wipe it down, and wrap it in unprinted paper towels.  They help to bring the last of the water out.

I like it Tatsuya-style.  Equal portions soy sauce and honey (hmm, I wonder now if real maple syrup would be good too) and 2 tbs ginger juice per cup of marinade.  Juicing ginger; grate fresh and squeeze.  Marinate for 1-2 hours, turn halfway.  It's very flavorful, so make sure to have lots of rice with it.

Tastuya tofu, brown rice, broccoli and daikon pickles = keep you running all day, so yummy + good weight loss too.
