I'm not a man of broad vocabulary. I never really did well in English at high school [I left with an Intermediate 1]. However upon leaving high school I have begun to read more and more. However to regain my point; I'm not a great reader and was wonder what science fiction novels/novella etc would you recomend for a moderate reader such as myself? I've read the obvious citations such as Dune and Do Androids Dream Of Electric Sheep.

Just read more and you'll get a broad vocabulary and become a better reader. I realize it may not be easy at this time, but if I can read Pynchon and Laura Moriarty and Nathaniel Mackey, you can read Asimov (or whatever). By avoiding things that are hard for you you're only doing yourself a disservice and cutting yourself off from some great books.
Niven and Alan Dean Foster (don't read Quofum) do strike me as unchallenging reads though.

The book of Dave is possibly one of the most astonishing books I have read in the last 5 years.

Does anyone know of any good Star Wars books for the moderate reader?

Nope. Timothy Zahn's books are probably as close as you'll get.

Will Self is a perfect recommendation for a reader with a poor vocabulary.
lol
When I was at your level, OP, I read higher level books and had a dictionary with me to look things up. Now you can look things up with google, dictionary.com, and wikipedia. Just FYI.

If you've read Dune you really shouldn't have trouble reading other Sci-Fi, IMO.

BORING
I'd say 2001 by Orson Scott Card is actually a pretty easy read.

3rd for Ender's Game. I waited far too long to read it, and when I did it was a fuckin revelation. Just wish I'd read it as a teenager.

Ringworld novels by Larry Niven - they are written in rather simple, straight language.
