Loads of difference with Hannibal. They had to cut so much of the good stuff out of the film to make it so it would appeal to the American mass market (ie they had to dumb it down a lot) and as a result with the film you know things are happening but
you don't get to find out why so much.
For example the Paul subplot in the movie you have an idea that Paul isn't very nice to Clarice and is maybe jealous of her then... oh look every ones having a meal together isn't that nice. In the book you get to find out exactly whats happening, see Paul's motivations, how that ties in with Mason and how come he made it to dinner.
