I've seen Hero and just watched House of Flying Daggers.
Are there any other films similar to these (more like HoFD) that he's done worth checking out?

Not One Less (Yige Dou Buneng Xiao) is my favorite. usual rural people were very natural and they actually lived in country side, not actors.

Didn't he do Raise the Red Lantern too? Not an action film like Hero and HoFD, but I enjoyed that.

My wife bought me 'Fight and Love with a Terracotta Warrior' recently in China. It is an older Zhang Yimou film where he plays the lead opposite Gong Li. Great film and haunting score. Seek it out.
