I want to swap from 1tb HDD to a RAID 0 array of 2 of the same disk. I also want an external back up hard drive and I want to avoid having to reinstall my tonnes of games and Windows and everything.
So my plan was to order the new Drive, clone my current one onto the external, then format both the drives for RAID 0, then clone the external onto the RAID array, and then just continue as normal.
Is this possible? Is there an easier way to do this?

PS Also in the future I will upgrade to RAID 10.

RAID0 is always a bad idea, just use JBOD instead... it doesn't yield any performance gains, but it also doesn't increase the risk of data loss

also, you can't just add another HDD and then turn it into a RAID array, you have to format the drives in order to create a RAID array, so any data on them would be lost, so you'd have to get another drive to back it up first

RAID isn't as simple or as convenient as you make it sound
