Do you have a Dual Channel mobo? What's the first option? 2x2gb? If 2x2gb and you have dual channel support (and 99% of all current mobos have dual channel support), then pick the first option. It would be about twice the fast.

Ah, I should have mentioned that. Yes, it's a dual channel (on a P5N-E SLI board to be specific).
I would be running two 2GB sticks in one channel, and then two 1GB sticks in the other two channels, for the total 6GB.
Barring the idea that most programs don't require all of that RAM anyway, you think that I'd be better off with the 4GB @800MHz? Is it true that AMD boards support higher bandwidth better than Intel boards, or is that a load of shit or something
It is true that AMD CPUs are faster in communication with the memory, the reason for this is the integrated memory controller. Intel CPUs need an extra North Bridge to communicate with the ram whick destroys many speed benefits you could get from faster ram.
If I were you, I would pick the first option, so just 4gb. If you google for benchmarks between 667mhz and 800mhz ram, you'll see not that big difference in speed, whilst you see a pretty speed increase with dual channel ram (the second option of yours would be dual channel)
