grml (grml.org): it's like Knoppix with the fluff removed, and replaced with gazillions of command-line apps, and with the hardware detection still in place. It still runs X fine, and as it's based on Debian, you can use apt-get or aptitude to keep up to date. And there are small, medium and full versions to fit your needs.
remove the GUI
With grml you don't have to remove the GUI--it's got X and a pack of window managers, but no fancy GUI.
One note: I'm using 1.1; the daily builds (at daily.grml.org) have had flaky video support for me, so be advised. But 1.1 has worked very well for me.
