I'm buying an HDTV with a native resolution of 1366 X 768. Will watching a show in 1080i look much different from 720? Does 1080i/p look distorted on a tv that doesn't have a native resolution of 1920 x 1080?

Both 1080i and 1080p would look fine on a 720p display. The display would just downscale the picture. You should still prefer 720p sources, however. Native resolution source > downscaling source to native res > upscaling source to native res.

So a 1080 picture downscaled to 720 still only has (something) by 720 lines of picture, right?

Yes. There's no way for a screen with a maximum vertical resolution of 720 lines to display 1080 lines. That doesn't mean that the picture is cropped, it means the picture is scaled/resampled and displayed at the sharpest picture possible on the display.
