I shouldn't have given you guys the other option. Poor decision making on my part.
I'm looking at a bunch of math journals that offer up the original latex submissions along with the papers posted. Think this will help? How do packages work? What's the best way to learn how to work with packages/roll your own?

Reading the sources may give you some ideas... either good ideas or really bad ones, and as a beginner, you won't know which example is to follow and what is to be avoided.
Read some tutorials or buy a good latex book. There are many.
As for packages, use whichever you need. Read their manuals.
Do not mess with latex internals until you are really know what you're doing.

On arxiv.org people post their .tex-files along with their pdfs. Find something you like and imitate it.
