Why does the double slit experiment conclude that observing a particle changes a particle? Can't there be other explanations besides "we change it by simply observing"? Because that conclusion makes people write books on why magic is real, thoughts influence reality, and some supernatural consciousness guides our metaphysical chakra crystals and crap.

It's not us actually "Observing" as in a thought process.
Observing merely means it interacts with another particle.

Yeah, what we observe is an interaction of whatever is there and our methods/instruments employed in the activity of doing the observation.
By analogy, what you see is an interaction of the energy input to your retina and your visual system. On the level of the teeny tiny, the activity of observing, which requires an apparatus capable of interacting with the teeny tiny, can't help but interfere with the teeny tiny. So you can't observe it in an unobserved state.
The mystical nonsense you speak of is a misinterpretation -- it is going too far to conclude that we must be entirely creating material reality with our minds.
