I did a bit of searching and popular variables affecting rate of reaction are temperature, pH, concentration of chemicals.
You might be provided with meat tenderizer or fresh pineapple juice. Or Lactaid which contains the lactase that lactose-intolerant people need to digest lactose in milk. Or some kind of detergent. Anyway you can google around with some those words.

i did once that involves luciferin. maybe you can try that.
