Whenever I look at senior job listings, most of the requirements are something an average competent programmer can do. How come there's a bunch of them and not many mid to low level programming jobs? I'm half tempted to apply for the senior positions just for kicks.

Getting "Senior Programmer" position means you ain't going to do much programming. Instead your job would consist of writing boring letters and enforcing coding standards. You also have to be an English Major.
