rooting Maemo or OpenMoko

A lot of people root their iPhone or Android phone, I take that to mean that they install a generic version of the OS in ROM (correct me if Im wrong here). So if its possible to install Android or iOS, could you install Maemo or Openmoko embedded Linux OS on any smartphone? If not, is it only proprietary drivers that would prevent it? Also, is Android a completely open source OS?

Android yes, but the manufacturers add a bunch of binary blobs to it.

While it would be possible to install Maemo or Openmoko into any Android smartphone, it's not likely that you'd also have the required drivers to make all the hardware components work properly. All you'd have is a portable computer with a framebuffer without phone, or wifi capability.
