There's no point. They do their job as needed and there are alternatives that exist if you really need basic coreutils.

They're not intended to be non-bloated. They're intended to have lots of features so people use them (and, dare I say it, depend on them) while still giving people the option to do things the old way.

There are plenty of UNIXier alternatives if you want them. Check out Heirloom:

That's not the point. The point is that the GNU system was built on the philosophy that if you don't like it, you can change it and share your changes. In 20+ years since its inception, GNU has become the most popular Unix-like userland. If popular opinion was that its bloated, there would surely be a high profile fork dedicated to minimalism.

The only high profile criticism I've seen of GNU having too many features is from Rob Pike, a developer of a competing OS, Plan 9. Naturally, his opinion only seems to be shared by other Plan 9 hipsters. Only recently have a handful /prog/riders adopted it.

To the rest of us its just stupid. Eclipse, Firefox, and KDE all chew up CPU and hog RAM as they run for hours, days, or weeks at a time. They're bloated. GNU cat does its job in milliseconds and goes away. It's not bloated. Letting a competitor convince you that it is because it has a -v switch is just stupid.
