Besides all the hatred, genocide, etc, what was so bad about Nazi policies?

If Germany hated Jews so much, why where there hundreds of thousands of Jews still left in the camps when the United Nations found them? Why did the SS fight to protect the camps? Why didn't they just kill the Jews shortly before? Or several years before? There was something strange going on, something we aren't allowed to know.
