There are 'real music' versions of old Castelvania soundtracks. Great stuff.
Jet set radio has some nice tracks too.

I can recommend several depending on what you like.
Megadriver are awesome and free. They redo megadrive game music as heavy metal and as far as I'm aware their mp3s are completely free to download.
Stermage has some remakes of metroid games music.
Machinae Supremacy is influenced by game music and uses a C64 style sid machine. I quite like Sidology series and return from snake mountain.
Nobuo Uematsu has done allot of cool things primarily in FF7 and FF8, his other music hasn't been so good. I personally like the boss tunes. My favorites are Still more fighting, Jenova, The Extreme, Liberi Fatali, The Birth of God, Jenova Absolute, "Hurry, Faster!", The man with the machine gun, Force your way and The legendary beast. There are several versions as well as the originals such as orchestral versions, Advent Children versions which are similar to the black mages as the both redo as rock (which doesn't sound as good as I'd like it too) and some tribute mixes which are usually techno and similar things due to the electronic nature of the original tunes.
Yasunori Mitsuda has some good stuff very similar to Nobuo but with less alternative versions. I like the Xenogears tunes in particular although some people like the cronno trigger music. My favorites are Grahf Emperor of darkness, Knight of Fire, Thames man of the sea and Stage of death.
There are some good C64 remakes such as Monty on the run tune and the theme of Nemesis (by O2 I think).
