Good video game music has to have that j-pop melody structure to it, such as Tohshiden. Orchestra stuff such as the Final Fantasy songs are good as well. I really liked PS1 Doom's ambient soundtrack. No vocals.

I like Nobuo Uematsu's Final Fantasy stuff. I like how he goes between doing very electronic stuff and then goes towards heavily orchestral/traditional sounding music. And a lot of it is very powerful. FF just won't be the same without him, though arguably it's gone to hell anyways, what with how X-2 was...
I also like the music for Katamari Damacy, just because it's so over the top and cheesy, and it knows so. :D

I did. It was good. And for the record, the best piece was the Chrono Trigger/Chrono Cross suite. You can't hear a live rendition of Time's Scar with a crazyass guest percussionist and not like it.

As far as fighting games go Guilty Gear has some fantastic music. Never fails to get me pumped for a few hundred rounds.
In the realm of RPGs you can't beat Yasunori Mitsuda's work. Xenogears was a fantastic game in part because of Mitsuda's music.
Lunar also had some great music that was really inspiring.

That music, is by far, the best music in a video game. Simply because it does something that other video game music doesn't do, it adds a significant identifiable emotional experience to the game that modern graphics or high-compression rates can never do.
That's what I think, anyways.
