Yoko Kanno has done some pretty good Jazz tunes, check out Bebop as well.

And you can't go wrong with John Coltrane, or Miles Davis.

I have no idea what that is cause I dont get my Jazz from anime.

I'm mostly into sax based Jazz, but Keiko Matsui is really talented if your into piano based Jazz. Her name is Japanese but thats about all.

Some other good Jazz musicans I like ... Boney James, Dave Koz, Euge Grove, Bosa Nova, Chris Bonifi(sp?), Steve Cole (He has a song called Off Broadway which is has an awesome beat to it)
