I've often thought of green jelly

When I think of green jelly, I think first of how clear it is and what flavour it should be. If it was not clear, it would seem to be spoiled. Food that is spoiled is often green.

But then I think past its clarity and I go right to what it should taste like. And I think it should taste minty, like mint leaves.

Something cool, minty cool. Something that should cool you down on a hot Summer day.

But it always tastes like fucking lime. From some mass marketer's arse, we are supposed to think green jelly is supposed to taste like lime.

Nothing tastes like lime.

Why did we assign the colour green to the taste of a lime?

I don't have an answer.
