Epcot Center?

The GF and I are going to Florida and taking a trip to Epcot, mostly because it only has pansy-level rides, and I am a pansy when it comes to rides.

So what's to do/see at Epcot that's interesting and fun?  We'll just be doing a day trip from Tampa/St. Pete's.

Man, I haven't been to Epcot in ages.  I remember a simulator ride inside the human body, and a walk around a lake with all these little international shrines.  It was a cool place to be at night.
