Is Shachoo spelled しゃちょお or しゃちょう? I was under the impression that if two "oo"s where present I'd have to put a う at the end but apparently that is not always the case.

That sort of funny spelling tends to have historic reasons behind it. Compare the ways (yes, plural) "oo" gets pronounced in English; "boot" vs "foot", I've heard at least two ways to pronounce "poor"…
