HOWEVER whenever I try to write the kanji it is bujutsu. I keep watching videos in Japanese and they say bujitsu and some bujutsu... I am totally confused...

It's jutsu.
I think it's because they just say it fast so it sounds like jitsu.
術, which is pronounced jutsu, means technique or art.
手術 = shujutsu means surgery (lit. hand technique)
武術 = bujutsu = military technique

This is part of the regional variation of Japanese pronunciation. In Tokyo you will often hear people replace "ju" with "ji" (for example, saying "Shinjiku" for "Shinjuku").
