Simple way of putting it: anyone that's older than your and you don't know them, you address as "sir" or "ma'am" (which is a contraction of "madam")

Isn't sir reserved title?
Or there're several kinds of sirs? One is "Sir Conan Doyle", other is just "Sir"?
