I know they all share common words but grammatically, how different are they? Would learning Turkish be enough to get by in Uzbekistan? How mutually intelligible are they?

They're mutually intelligible to some extent. I've travelled through that whole region and can testify to this. Even the Uighurs in China do.
It seems Central Asian Turkic is kinda like Old English compared with Modern English.
