It's just a slurred way to say "desu." 

It's like saying the difference between saying "I am going to go to the store" or "I'ma go ta da store."  Isn't impolite but seems somewhat less formal because you're talking quicker.

ssu is as polite as desu in speech, but in writing, it's about the same as writing "gonna" instead of "going to". I definitely would never turn anything in at school using ssu. You'd probably lose points for improper spelling, kind of like if you spelled "probably" "prolly" because that's how you say it fast.
