I completely agree, it is best to know how to read everything in kanji but you don't have to use kanji everywhere. How many people seriously write 御目出度う御座います like that or use kanji for animals name ? If you read an old novel you will encounter many kanjis that are not included in the jouyou list but it doesn't mean you need to use them in your daily life. A majority of japanese in their 20's can't even write properly the jouyou kanji without a cellphone, as a foreigner why should you bother being more japanese than the japanese themselves.
