Record of Lodoss War Advent of Cardice, it's like Diablo only better and with anime references. Phantasy Star Online is another Hack-and-Slay-RPG which is very enjoyable in offline mode (if you buy a broadband adapter there is a free private server available, you can even play together with Gamecube and PC users).
If you can handle a lot of FAQ reading and are a strategy nut, try Advanced Daisenryaku 2001 (partial english translation available) or Gihren no Yabou - Blood of Zion (japanese only but good FAQs).
If you like arcade action, do Virtual-On Oratorio Tangram or if you like shooters do Radilgy or Ikaruga or whatever the shooter fans recommend. Other cool mecha action games are Space Griffon and Frameglide.
Soul Calibur is a 3D-fighter that looks surprisingly good even today. There is a lot of goodies to unlock, if you like that, and you can change the female characters' panty color. What brings Dead or Alive to mind, no other version is as "bouncy" as the dreamcast one.
Berserk is a very nice but violent action hack-and-slay with a giant sword which serves as a side story to the anime and manga series of the same name.
If you like Mahjongg or Sonoda Kenichi designs, get the Idol-Janshi wo Tsukkuchao, it's easily the best game in the series and features a create-your-own character mode that the arcade version did not.
The Sonic stages in Sonic Adventure 2 are a must-play, but the other character stages can be more annoying than refreshing.
Vigilante 8 2nd Offense is a nice car battle action game from the country of Non-Japan. It is much better to look at than the Playstation version and includes all stages from the first game which can be unlocked via a cheat code, which results in a lot of stages to choose from. Many different vehicles will be unlocked as you play.
Wind and Water Puzzle battles is a very nice indie-published chain-heavy action puzzle game, but the low quality artwork may put you off. The alternative is Puzzle Fighter II from Capcom, very addictive, or Hanagumi Taisen Columns 2 if you like Fujishima Kousuke designs.
Shenmue I and II are interesting if you have a lot of patience for running around and questioning people. Graphics are amazing especially in part 2, minigames and martial arts training can be fun or tiresome work depending on your mindset. Collecting SEGA gatchapon figures is also an option. The fighting is minimal, you will more often be doing QTEs which demand you to quickly press buttons shown on the screen. Story moves slow, and can move much much too slow if you get lost in the mini-games. Only fun if you are the patient type or long for a more realistic and peaceful game world.
