If you make a character, pick the Advanced option to select your own skills.

Also, right after you create a character, you can't delete them for a real life week. But you have 5 character slots total.

another PROTIP: If you hate getting paralyzed by mages, buy a pouch and cast trap on it. It'll free you from the paralyze when you open the pouch, magic trap sucks so it won't kill you.
