OP should check out Sky Odyssey (although quite aged now due to being a PS2 launch game) and Drakkan (similar). They still look quite nice, comparable to mid-life PS2 games.
The Godzilla game is both pretty and one of the best games available too. Definitely shouldn't be left out of anyone's top 10.

Vagrant Story and Final Fantasy Tactics.  Yasumi Matsuno is why I'm looking forward to FF12 so much.

Though it's an MMO, I'd mention World of Warcraft as well.  The graphics aren't as slick as many other games, but the designs of the world can be downright amazing.

And yes, it bears repeating that SotC and ICO are among the most artistically beautiful games ever.

Here's a curveball:  Katamari Damacy.  Its distinct visual style is one of the biggest parts of its charm.
