Oh shit, basically all rpgs I've played. I've only completed FFVII and FFVIII iirc. I havn't killed the last boss in FFIX, the older FF's are a tad too hard or boring (FFVI for example).
Vagrant Story got boring.. almost every rpg I've played, especially the emulator ones since you can cheat easily wich is too damn tempting and then you ruin the game since you can't break the habit :( *sigh*

I'd say Shen Mue II. It totally rocked, but it was so long (not to mention I'm a collection-maniac, I need to get ALL the secrets in a game), so after my whole summer vacation passed and I hadn't cleared through the second CD, I kinda went "WTF" and stopped playing. It was a friends' anyway, so I needed to return it.

Mmm... I don't I've played a game that was good, but too long for me to beat. So long as it keeps me interested, I'll never stop playing it. I mean, I've gotten every character in Chrono Trigger up to ** twice now (faulty game genie deleted my original saves when I was 10). But there are plenty of games that I haven't beat because I got bored of them before they ended...
I think the only game I can think of that most closely fits your description would be Blast Corps for N64. I played that thing forever, and gave up once I unlocked the platinum medal challenge on Mars (or something like that). That game just never wanted to end.

I was never able to finish Galaga or Tetris. Those games are frickin' long!
On the serious note, any Megaman Battle Network. I owned my way through, just so the final boss could kick my ass over and over.

Similar with me, Phantom Brave being the troublemaker in my corner though. Also, I think that Resident Evil 1 is the Hot-Shit but I can't complete it. It's good, but it has a terrible structure in the opening areas of the game.
Super Spy for the arcade. A total of 3 people have probably beaten it on the actual arcade machine.

Battles too. Only one I've played I didn't speed up battles for is Dual Orb. Mostly because the sprites are so nice looking. Reminds me of Phantasy Star sans technology, but you see the full body all the time.
Anyway...I think Summoner needs to be up here. All the problems with a 16bit RPG in an unspeedable version. Battle damage is also pretty pathetic making it last even longer. Poorly done ripoff of Vagrant Story's combat. I never got past that first big city.
