Allergic to eggs

I want to make these scones:

Method

Preheat oven to 220C, 425F, Gas Mark 7. Lightly grease a baking sheet.

Sift the flour, baking powder and cinnamon into a bowl and rub in the butter until mixture resembles breadcrumbs.

Stir in the sugar, dried fruit and Scott's Porage Oats. Beat the yoghurt and egg together, add to the bowl and mix to form a soft dough.

Tip dough onto a floured surface and knead lightly. Press dough out gently to form a 23cm circle, cut into 12 wedges. Place on a baking sheet and bake for 10-15 minutes until well risen and golden brown.

Problem is they use a beaten egg which I can't use. I think the egg here is being used as a binding agent. What egg substitute can I use?

Tofu? Mashed Banana? How much would I use?

Try applesauce or egg substitute which you can buy inside of a milk carton. I think the brand is called "egg beaters".

Get a box of Ener-G Egg Replacer. It's a mix of starches and leaveners used for people who don't or can't use eggs. It comes in an ugly orangey 70s-ish box, and the stuff lasts forever. Anyway, you take 1/2 tbsp Replacer and 2 tbsp water per egg, mix them well until it gets kinda goopy, and then add to the batter.

You can also use 1/4 cup silken tofu (the kind in the aseptic package on the shelf) per egg. Just mash the tofu up before adding to the batter.

Or take 1 tbsp flax seeds and 3 tbsp water per egg, mix, and let form a goopy consistency before adding to the batter. If you go the flax seed route, keep in mind that they spoil easy, so you have to keep them in the fridge or freezer.

I've used recipes that call for applesauce in place of eggs, and it just doesn't work for me. Bananas will add a banana flavor to your cake, at least in my experience.

Also, most, if not all, vegan cookbooks will have lots of tips on replacing eggs in baking.

DONT USE "Egg beaters brand" egg alternative, it still has egg in it!
