bitch flippin cookery

I want to learn how to cook. Like really fuckng cook. My current job (contry club) isn't really Haute cuisine.  I want to cook like the gods. Like batalli, white, Keller. I have the basic technique down and I'm sure most of the repotoire comes from simply working in a variety of kitchens. But can I get there faster by cooking out of the greats cookbooks, eating at good places? Is that how these guys got their knowledge that to me seems so intrinsic? I know that yet I have no where the ideas to compete on a show such as masterchef, but that's a goal I aspire to reached some day.

You get it from "doing". Which means working your ass off in a variety of restaurants. You'll get to experience different cuisines and produce especially if the place changes their menu on a seasonal basis.

What you don't learn from one place can always be picked up through a stage.
