tripe/tripas

i live in california. we have a billion messicans round these parts.
i go to taquerias and get tripas tacos.
its cow intestine.
deep fried. served on a two corn tortillas (holds together better when they are layered like that) and then a spoon of salsa.

Intestines are goooood. Its tipical of Firenze too. It's like the spanish tripe but with cheese.
