from this upcoming food shortage where all i can find is pancake mix..
buutt

Well you're already fucked because you're using pancake mix instead of fresh pancakes harvested from the innards of the barrel cactus, which was known for hundreds of years as being the source of a tasty hangover cure for warriors who had spent the night downing tequila after repelling Spanish invaders. 

My advice to you would be to prepare the pancake mix eggless, and with a bit more water than the mix recipe calls for.  Faux crepes, if you will.  Then prepare a cherry and port wine reduction, and a light cream cheese sauce with steamed spinach.  Use either as your topping.  Serve with fresh cut tomatoes.
