I'm looking for a world class soup recipe - I just got a brand new soup pot and I want to make a huge batch but I don't have any stand out recipes. I can make vegetable, chicken noodle, clam chowder etc. and they are good but if you guys have any way to enhance those soups or any other amazing soup recipes....gimme
Saying you can make "vegetable soup" is like saying you can make "sandwiches". There are a billion different ways of making a vegetable soup, and it's one of those things that you can make with whatever you happen to have laying around and it'll almopst always come out tasting great. Here's what I like to use in my soup:
2 Big carrots
2 Big parsnips
An onion
A leek
A couple of potatoes
Butter
Parsley
Cream
Chop up the vegetables into fairly hefty chunks. Melt some butter in the pot and put in your onions and leeks. Sweat them off slooooowly. Low heat, lid on, so there's a barely audible sizzling. Shake 'em up every now and again to get a good coating of butter all over everything. After about ten minutes drop in the rest of the veg and do the same thing for a while. Pour in as much water as you think is necessary, and simmer for... well, for as long as you can wait. Depends how hungry you are. When everything's cooked to the level you like (some people like the vegetables to still be quite firm, others like to stew the hell out of everything) put about half of the soup (or as much as you can fit) into a blender and make a fairly coarse pureé out of it. When you mix everything back together again, you'll have a nice, thick, texured soup with lots of big chunky vegetable bits hanging around in it. Finally, season with salt & pepper and a big handful of chopped parsley, then add a splash of cream to make it extra rich, and you're done. Enjoy!

borscht, thai seafood tom yum, tikka lamb curry, or chinese hot & sour soup. google them and see if the ingredients are to your liking.
