Running Windows without a GUI

I mean 100% text mode Windows NT, 2k, XP, 2k3, Vista, or any other NT4+ version.

Well, isn't the graphics subsystem wholly contained in gdi.exe ?  Furthermore, I know not many built-in windows programs use the console but say what if i was running servers or something like that?
