Would a Nvidia 8800 GTS with 320MB of RAM beat out two 7950 GTs with 512MB of RAM? This question is driving me fucking crazy.

Depends on 2 things really:
1: Does the game/os/driver properly support SLI?
2: Are we talking about directx9 games or directx10?
In either case, SLI is kinda shitty. Always go for a single more powerful card over two crappier ones.

Everything on my PC is SLI ready and I'm talking about DX9. By the way, when will it be time for everyone to shit their pants over getting a DX10 card? DX10 doesn't mean shit now correct?

correct
wait about a year for widespread dx10 usage to happen, along with widespread windows vista usage

I would advise getting the 8800GTS, because if nothing else you'll future proof yourself somewhat
