Anyone knows which western and japanese fonts OSX uses (serif & sans-serif)? The standard Windows fonts just fail in comparison.

I managed to salvage some OS X fonts off a rooted box (plural boxen), the font names ... why do I have to remember them?  They are on Apple's site.
