Need help with a computer.

So I'm looking for RAM, and I've come across a few terms I'm unfamiliar/unsure of.

In buying RAM, I know I should get 800 sticks in order to match my Motherboard's standard (ASUS P5W DH DELUXE mobo), however, I've come across 1066 Mhz RAM sticks, as well as 800 Mhz sticks with various timings... My questions are: Is there a significant gain in getting 1066 Mhz RAM? And how much does a decrease is CAS Latency improve performance? I ask that because I see 800 Mhz sticks at CAS 3, 4, and 5 and the 3's are significantly more expensive, and would like to know if the payoff is worth it. If CPU matters in all this, I've ordered an e6700 (one of the new Pentiums).

Oh, I also had one more question not regarding ram... I'm pretty set on getting a 1900xtx card (so please no discussions on the 7900 geforce and whatnot), however, I do not know which brand I should buy. I am also going to buy a Zalman video card fan, so stock cooling is not going to be a deciding factor. Do you have any recommendations? Thanks all.
