Session Saver is the most important extension, anything else is optional. Living without it is not an option, users unaware of it are often IExplore rejects.
Gmail Manager (sign into multiple gmail accts at once)
Image Toolbar (Like IE's with save, copy function)
Cookie Button in the status bar (for allow/deny cookie settings)

I always do Adblock and the Filterset first, the rest happen in whatever order I come to them in.
