Running Gentoo without sick CFLAGS is pointless. What's the point in compiling everything if you don't optimize it.

I don't watch it because I want to learn, I watch it because there are many notices in the ebuilds about incompatible/broken/changed stuff so instead reading 100/200 ebuilds before I install a box I use a terminal with a large scrollback buffer and I check every 20 minutes or so.

Be nice if it summarized all the messages at the end, instead of expecting people to be there to read them when they just want to leave their system upgrading overnight.

On a similar note it would be nice if it didn't just exit when a single package out of a long list fails to build. This "feature" wasted a whole lot of my time last week as I would get up in the morning, swear, resolve the problem and resume. When I'd get back from work I'd find that it had managed to update another 2 packages, then had an error and quit again. Bastard portage :(
