Is there any good program to extract the audio from a video,
an AMV for example?

mplayer with the -dumpaudio flag might work.

Media Player Classic/ffdshow audio probably do, Winamp perhaps, GoldWave is what I use because it's old and I'm too lazy to find another way (besides, every time I want to do this, it's to edit the sound in some way).

VirtualDub does it too. Just load the video and choose "Save WAV...".
