Does anyone have any idea why Microsoft Word feels the need to shrink my jpegs when entered into a document. It even has the nerve to call their size "100%" when they are clearly not.
Word also seems to enlarge PNG files. Gif files however, seem to be the only common image type it wont change when placed in a document.
Any ideas? I'd be greatful for any decent input into this. Thanks!

One problem to consider that many displays are ~72dpi, while paper is usually around 300. So Word may well be correct in calling a smaller apparent image size "100%".

#2 is mostly correct, and has successfully located the problem. Now I will give another mostly correct explanation.
A bitmap image is made up of pixels. On the monitor this image will normally be displayed with image pixels mapped to monitor pixels on a 1:1 basis. This is what you, #1, perceive to be the image's size.
But the image also has a resolution, usually expressed in dots-per-inch which is used to determine what size it should have in real life. Word will honor the real-life-size of the image.

How would one make Word not use the "real-life-size" version of the image?

You don't.
Get hold of a proper graphics editor and change the image's resolution to 72 dpi.
