how would I go about this? I'm pretty much a dumbass when it comes to things DVD authoring-related.

Google for "MKV Extractor GUI" and separate the avi, subtitle file, and audio tracks.  Then you can burn it in Nero.

I didn't think NeroVision could do subtitles. Not soft titles anyway. In fact, I've only been able to find one consumer program that can do stuff like multiple audio, multiple subtitles, etc. without being impenetrably difficult to use, and that's Adobe Encore (unfortunately it's about as stable as a one-legged alcoholic juggling uranium rods in a thunderstorm on a unicycle while undergoing a deep emotional crisis). Most home DVD software sucks - it either babys you through every step and has fuck-all features, or else it's some totally frustrating head-scratcher of an interfacial mess.
